To dine at Demi is a communal experience. At no point did we feel like guests in a restaurant, rather like friends at a dinner party. That is, if your friends are Michelin star worthy cooks.
This dish was one of many AHA! moments throughout the night. As we sat at the counter, having casual conversation about food, wine and life with Chef Gavin, patrons around us and the rest of the Demi team, I couldn’t help but think, this is what dining should be.
