Canelé, Coffee Gelato, Cremé Fraiche Cream, Chicken Skin and Miso Caramel

Chef Jacob Bickelhaupt has complete control of the dining experience at Konro, a pop up in the LoDo District, and you're safe riding shotgun because his passion is painted across every plate of his tasting menu. From one bites that radiate flavor is such a small package to dishes that you are lucky enough to get more than one spoonful of leave diners in awe about what will come next on the playlist. Konro takes the concept of restaurants being a snapshot into the kitchen of beloved chefs and turns it on it's head by bringing the kitchen to the front of house. Instead of having a staff, he says that his dynamic group of 4 putting on these dinner parties as his family which makes sense as he is stationed in a small apartment for service instead of a full restaurant. Each course gets more creative as they are emblems of his emotions and memories. His menu is flexible with more courses that could be constructed on site. One that doesn't change often is the ice cream sandwich. The french pastry, canelé has a nice crust that conceals more of a custardy inside. It is cut in half to stuff glistening coffee gelato, which brings in the after dinner espresso mood to life. Finally, on top are dots of salty caramel but Bickelhaupts element of salt comes from crispy chicken skin that he had laying around from previous dishes and then miso to get a sense of umami. The creativity flies in unconventional sorts, which makes it hard to say no to Konro!
